E. coli Outbreak Details:

The E. coli outbreak investigation began after the Minnesota Department of Agriculture reported a cluster of illnesses. As of November 20, 2024, 15 individuals in Minnesota have been infected with E. coli, with onset dates between November 2 and November 10. Testing revealed that a sample of ground beef contained E. coli O157:H7. This triggered the ground beef recall to prevent further spread of the E. coli contamination.

Which Ground Beef Products are Recalled?

The Danger of E. coli Contamination:

E. coli O157:H7 is a dangerous bacterium that can cause severe illness. E. coli symptoms include severe stomach cramps, bloody diarrhea, and vomiting. While most people recover, some may develop hemolytic uremic syndrome (HUS), a form of kidney failure particularly dangerous for children and the elderly. Remember: Antibiotics may worsen E. coli infections.

  • Identify & Isolate: Immediately check all refrigerators and freezers for any recalled ground beef products.

  • Do Not Serve: Do not serve any of the recalled ground beef. This is crucial for preventing further E. coli infections.

  • Proper Disposal: Dispose of the recalled products immediately following proper sanitation guidelines or return them to the point of purchase.

  • Thorough Sanitation: Thoroughly clean and sanitize all surfaces that may have come into contact with the recalled ground beef. This includes countertops, cutting boards, and utensils.

Preventing E. coli: Food Safety Best Practices

To prevent E. coli contamination and protect your customers, enforce these vital food safety practices:

  • Cook to 160°F (71°C): Always cook ground beef to an internal temperature of 160°F (71°C) to kill E. coli.

  • Use a Food Thermometer: Use a reliable food thermometer to ensure accurate internal temperature.

  • Handwashing is Key: Emphasize thorough handwashing with soap and water after handling raw meat.

  • Prevent Cross-Contamination: Meticulously keep raw meat separate from other foods during storage and preparation.

  • Clean and Sanitize: Wash and sanitize all cutting boards, utensils, and countertops after preparing raw meat.
